Lets face it, Valentines Day ain't exactly Christmas or one of the real holidays so I don't want to spend hours slaving away in the kitchen. If you do, then congratulations, but if you feel like cheating this year then this is the recipe for you. The hardest part will be driving to Target and buying a heart shaped silicone baking pan, luckily I had one in the cupboard so it was a super lazy day for me.

This "panacotta" has only 3 ingredients all of which I pulled out of the pantry. My husband and kids devoured them a week early because they had to taste test of course.

| Strawberry Coconut "Panna cotta" 1 packet strawberry jelly (see note) 120ml (1/2 cup) boiling water 1 can coconut cream (400ml) 1/2 tsp vanilla extract Mix the jelly with the boiling water in a glass pyrex dish. Allow to cool slightly but not so much that it starts to set. If it does set which mine did because I got distracted by my children, then warm the jelly again in the pyrex dish over a pan of simmering water. Whisk in the can of coconut cream and vanilla extract. |
Pour into pre-greased silicon molds. I used coconut oil but any flavourless oil would work. If you don't have heart shaped molds you could just eat these out of ramekin dishes. This amount made 6 heart shapes the approximate size of texas muffins. Allow to set in the refrigerator for at least 3 - 4 hours.
Serve with berries and strawberry sauce. I made a cheats strawberry sauce by adding a teaspoon of boiling water to some good quality strawberry jam.
These have a strong strawberry flavour and the coconut isn't overpowering at all. My husband doesn't normally like desserts that are too coconuty and he ate a whole one and loved every bite. The kids and myself adore coconut and we smashed through them. It was valentines day for the whole family.

Oh and this picture above is just a serving suggestion that comes highly recommended. I melted some 70% dark chocolate and as I poured it over the hearts it started to set straight away and was like (gourmet) magic shell topping. These became like a strawberry, bounty dessert.
I'm not usually an advocate for cheating in the kitchen but sometimes it's nice to have a trick up your sleeve for a busy day.
Notes - The jelly I used is Aeroplane Jelly, the natural colours and no preservative green packet variety. In Australia jelly comes in a granular sugar like form and that is the type I used. I remember in England it came in a solid cube like form and I have not tried it using this. I'm sure it would work just fine, I just wanted to clarify. I would love to hear feedback or comments if anyone has tried this before.
